How to make stained glass biscuits

These biscuits are one of my favourite Christmas must bakes.  They’re a great money saving way to decorate your Christmas tree, they taste delicious and the kids will love making them.  So easy to make and yet so effective on the tree.

Ingredients

  • biscuits ingredients175g plain flour
  • 50g caster sugar
  • 100g butter , cold, cut into chunks
  • 1 tsp ground ginger
  • zest of 1 orange
  • 1 tbsp milk
  • 12 fruit-flavoured boiled sweets
  • icing sugar (to dust and decorate)
  • Silver decorating beads and ‘hundreds and thousands’ for decorating
  • length of thin ribbon

Method

Step One

biscuits doughPre heat the oven to 180C/fan 160C/gas 4.
Line 2 large non-stick baking sheets with baking parchment paper.
Whizz the flour, ginger, zest and butter with 1⁄2 tsp salt to fine crumbs in a food processor.
Pulse in the sugar and milk, then turn out and knead briefly on a floured surface until smooth.
Wrap in cling film, then  put into the fridge to chill for about 30 mins.
Flour the work surface again and roll out the dough to the thickness of about 5mm.

Step Two

biscuit on tray1Use biscuit cutters to cut out shapes, then use smaller cutters to cut out the middles.
Re-roll leftover pieces and repeat rolling and cutting process.
Make a small hole in the top of each biscuit to allow for the ribbon to hang it
Carefully lift the shapes onto the baking sheets.
Roughly crush the sweets in their wrappers with a rolling pin, then put the pieces into the middles of the biscuits

Step Three

Transfer to the oven and bake for approximately 15-20 mins or until the biscuits are golden brown and the middles have melted.
Remove from the oven and leave to cool

Step 4

When the biscuits are cool you can decorate them to taste or just sprinkle with icing sugar and then thread with ribbon

    I made a batch of these with my daughters at the weekend and they turned out beautifully. They are so effective. The only problem is that they tasted so nice that they have all been eaten already. I am going to have to make a new batch for the tree.

    Will these keep if you make a big batch all at once?

    I find that they last really well if they are kept in an airtight tin. I usually make a large batch and then just bring out a few at a time for the tree.

    They also make lovely gifts for special school friends. My kids always used to take some in at the end of the Christmas term.
